My go to recipes.

Every time i have to make a cake, or cupcakes. The exact same ingredients go in. Same quantities. Every time! It always works out perfectly (unless you do half cake mix half toffee. That one turned out bad).
It's a basic white sponge recipe so you can add anything you want. Food colouring, nuts, chocolate chips, cocoa powder, fruit. The possibilities are endless.

So here it is: 6oz Self Raising flour (Sieved), 6oz Caster Sugar (Sieved), 6oz Butter, 3 eggs.
1. Melt the butter and add to the caster sugar.
2. Add 1/3 of your flour  to the mixture then 1 egg. Repeat until all ingredients are gone.
3. Then just add in any extras you want.
20 minutes in the oven at 200




Pancakes are equally as simple. Here is my go to for them. By pancakes i mean crepes. They fill an entire frying pan and are equally delicious hot or cold as long as they are thin. They can also be eaten with whatever you can think of. I once went to a restaurant where they served spag bol on crepes. Tasted decadent! They are truly versatile. Sweet or Savoury.

And it is: 1/2pound of Plain flour (Sieved), 1 pint milk, 2 eggs.
1. Combine. It's that simple.
2.Leave in the fridge for half hour, i don't know why but this makes them 10X better!
3. Heat up your frying pan and add a little butter to grease it.
4. Pour on thin layer of mixture, when it comes free from the pan it's time to flip.
